Cowboy Beans

Ingredients (makes 2 quarts)

  • 1 lb dried pinto beans
  • 1 lb cooked center cut ham slice, cubed
  • 1/4 lb salt pork, whole but scored
  • 1 large onion, chopped
  • 3 tbsp chili powder
  • 2 garlic cloves, minced
  • 1 jalapeño chili, minced and remove seeds
  • 2 tsp worcestershire sauce
  • 1 tsp tabasco sauce
  • 1 bay leaf

Directions

  • Place beans in dutch oven
  • Cover with water by 3 inches
  • Let boil for 2 minutes
  • Remove from heat
  • Cover and let stand for 1 hour
  • Drain water
  • Add fresh water to cover by 2 inches
  • Add remaining ingredients
  • Boil, then reduce heat to medium
  • Simmer approximately 3 hours, stirring frequently
